Whipped Ricotta with Caramelized Apples, Pecans & A Hot Honey Drizzle

1. Add ricotta and olive oil to a food processor. Blend for 1–2 minutes, scraping down the sides as needed, until smooth, fluffy, and creamy. Set aside while you make the apples. (You can refrigerate).
2. Peel and chop 2 large apples into small diced pieces.
3. In a medium skillet over medium heat, melt the butter. Continue cooking, swirling with a wooden spoon occasionally, until the butter turns golden brown and smells nutty — about 2-3 minutes.
4. Add the chopped apples to the brown butter. Sprinkle in both sugars, vanilla extract, cinnamon, salt and thyme. Stir to coat the apples evenly.
5. Cook for 6–8 minutes, stirring occasionally, until the apples soften a bit and the sauce thickens and caramelizes.
6. Spoon the whipped ricotta onto a shallow bowl or serving plate, spreading it out evenly.
7. Top with the warm caramelized apples.
8. Sprinkle chopped pecans and a Drizzle of warm hot honey on top.
9. Serve immediately with crostini, crackers or toasted pita and enjoy!!!
